Zucchini
My sister-in-law gave me a zucchini squash out of her garden. It was about 1 1/2 feet long and 4 inches around. I didn't zucchini could grow that big. I made Vegetable Lasagne, Zucchini Chocolate Cake, and Zucchini muffins. My kids made me promise that I would not cook anything with zucchini for a long time. The cake was very moist and you would never know that it had squash baked into it. Can you count that as a serving of vegetables? You could see the zucchini in the muffins, but couldn't taste it. Zucchini is a weird plant that morphs in to whatever you are baking with it. Either way, I liked it even if the kids didn't. That cake sure disappeared quickly for all their complaining about it.

I actually tried to greow my first garden this year, maybe you can give me your recipe for chocolate zucchini cake, I've never tried it.
I'll email you the recipe. It is Aaron's new favorite cake. If you google "zucchini recipes", you'll find lots of things to do with your zucchini. I'm impressed that you grew a garden. It's not as easy as most people think. Good for you!
