
Today is Esteban's 11th Birthday. As family members called to wish him a happy birthday, he would inform them that it was also the anniversary of the hook-em horns sign's invention. He finds it very fitting that he was born on this day, since UT is his favorite college and future alma mater.

He had a couple of friends sleep over last Friday. This was the cake that he requested for me to make for him. It is a chocolate cake with burnt orange frosting and the Longhorn symbol just as he wanted. I bought a cake pan in the shape of Texas years ago and it has been more useful than you may think.

I'm left wondering, how many other states have cake pans? In Texas, you can find cheese, corn chips, and pasta all in the unique shape of the great state of Texas. Along with the cake pan, we have cookie cutters, plates, and a Monopoly game all in the shape of Texas. It is a game with tokens such as an armadillo, pick-up truck, chili pepper, cowboy hat, and cowboy boot. The properties include The Alamo, the Texas State Capitol (which is taller than the US capitol), Ballpark at Arlington, and the Astrodome.
That's not all. As long as you are a Dallas Cowboys fan, can find anything you want with a big blue star on it. I thought the Dallas Cowboys Crock-pot was going a bit far.
Esteban recently informed us that no matter how long we live in Utah, he will always tell people he is from Texas. He is a fun kid and I enjoy seeing him develop his personality. I'm so grateful for him and I really love my Texas kid.
